Yellowfin Tuna crusted w sesame & poppy seeds
serves 8

2-1/2 pounds Tuna steaks - sushi grade ( You can special order from Whole foods- have them cut 3/4" steaks for you)
6- Tb Poppy seeds
8- Tb sesame seeds
3 Tb garlic powder
2 Tb onion powder
1-1/2 Tb sea salt
3-egg whites- slightly beaten( pour onto a plate to dip steaks into)

Mix poppy & sesame seeds, garlic, onion powder & salt in a shallow container large enough to dip steaks in.
Preheat a grill pan on stove to med. high heat. Add canola oil to pan.Dip tuna in egg whites, coat with crust mixture, place steaks in pan. Sear on each side until crust is a golden brown & it has reach desired doneness. I cooked it med. to med. well. Remove from pan & let rest~3-5 min. Slice into 1/4 " slices & fan over baby greens.

Seasonal baby green salad
serves 8
1- large container baby mixed greens( I used approx. 3/4 of container)
1- pound French green beans- steamed until aldente

Dressing
1- Shallot minced
6- Tb Organic balsamic vinegar
1- Tb whole grain dijon mustard
1- c. Kalamata olive oil
3/4 c. parmigiano reggiano
Sea salt & pepper to taste

Whisk shallots, vinegar & mustard in a med. size bowl until combined. Drizzle in oil while whisking constantly until combined. Add cheese & stir to combine. Taste & adjust seasonings. Toss desired amount of dressing with the greens.
