Turkey burger from Donald Trump's Mar-a-lago

Oprah's favorite turkey burger
serves 8-10

1/4 c. thinly sliced scallions
1/2 c. finely chopped celery
2 granny smith apples
1/8 c. canola oil
3-1/2 lbs ground turkey breast
2-tsp. Tabasco chipotle pepper sauce
1- lemon ( zested & then juiced)
1/2 bunch parsley, finely chopped
1/4 c. Major grey's chutney pureed
1-1/2 Tb sea salt
1-1/2 Tb fresh pepper

Chutney spread
1- anjou pear, peeled & diced
1/2 Tsp. ground cinnamon
1/2 Tsp. sea salt
1- 1/2 c. Major grey chutney
1/4 c. dried currants or raisins
* make this spread ahead of time

Saute scallions, celery & apples in the canola oil until tender. Let cool. Place ground turkey in large bowl & add sauteed items, pepper sauce, lemon juice & zest, parsley & 1/4 c. chutney.
Shape into burgers, cover & refrigerate for 2 hours or longer. Season burgers with the salt & pepper. Place on preheated, lightly oiled grill or grill pan. Grill approx. 7 min. per side or until cooked through & nicely browned.

Chutney spread
Toss diced pear with cinnamon & sea salt. Place on parchment lined cookie sheet & bake at 350 for 10-12 min. Let cool. Add pear to the 1-1/2 c. chutney & currants. Stir & serve.

*I served these delicious burgers on toasted pretzel bread with the chutney spread. I also made a refreshing veggie couscous salad for a side dish. Recipe follows...


Couscous salad

This recipe is very basic & foolproof!
serves 6
1-1/2 c. couscous ( bulk section at Whole foods)
2-3/4 c. filtered water
1/4 Tsp. salt

*In a sauce pan, bring water to a boil. Add salt & stir. Add couscous & remove from heat & allow to sit for approx. 5 minutes.

* Add whatever ingredients you like to the couscous. This is my combination.

1-c. red, yellow & green pepper finely diced ( I got the peppers at the Whole foods salad bar)
1/2 of a lemon - juice & zest
2- garlic cloves crushed
1- Tsp. cumin
1- Tsp. honey
2-Tb olive oil
1/2 c. toasted slivered almonds
Fresh parsley chopped
Stir in ingredients, add sea salt & pepper to taste
