Witches Stew ala Vegetarian Tortilla Soup


I took bits from a few recipes, added some of my own touches & created this concoction.

Vegetarian Tortilla Soup
1 qt. Organic Veggie Broth
1-Red Pepper chopped( I used garden fresh)
1-Green Pepper chopped( garden fresh)
1- Medium Onion chopped
2 Lg. Garlic Cloves minced
2- 15 oz. Organic Black Beans
28 oz. Red Enchilada Sauce
1- 14 oz. Organic Fire Roasted Chopped Tomatoes
2- 4 oz. Green Chilies diced
1 TB. Cumin
1- 1/2 TB. Chili Powder
3- Blue Corn Tortillas cut in bite size strips
1 bag Organic White Corn thawed
Toppings
1- Avocado slices
Fresh Lime juice to taste
Shredded Mexican Blend Cheese
Crushed Tortilla Chips
Sour Cream

Saute peppers, onion & garlic until tender in heavy bottomed soup pot. Add all remaining ingredients except corn & tortillas. Simmer for 1 hour or until flavors blend. Add corn & tortilla strips until heated through & more chili powder and/or crushed red peppers to taste~ add toppings & enjoy!
Serve with guacamole & chips and/or corn bread

  1. It was great soup! I like the addition of enchilada sauce, great idea, it gave the soup nice flavor.
