Cedar Planked Salmon with wild rice & roasted asparagus





My in-laws often request this dish when they come for a visit. I usually serve it with roasted asparagus, wild rice & garlic bread~enjoy!
Cedar plank directions
1~ Soak plank in water for at least 2-3 hours
2~Prepare grill to a temp of 350-400 degrees
3~Place salmon on plank, close lid & cook approx. 20 -25 min.
*** always keep a spray bottle on hand in case of flare-ups!

Salmon dinner for 2
1 pound Coho salmon ( from Whole foods, ask them to remove bones!)
2 tsp. Dijon mustard
3 Tb. brown sugar
1 lemon
Fresh rosemary chopped
salt & pepper to taste
1 soaked cedar grilling plank
*Mix together the dijon & brown sugar & brush on the salmon, sprinkle on the rosemary, salt & pepper. Place salmon skin side down on cedar plank, place on grill & close lid. You don't need to turn fish over. It will cook evenly with the lid closed. Squeeze lemon over fish before serving.
